Dolar Group was entrusted with creating the complete culinary heart for Kesariyaa, a restaurant specializing in authentic Rajasthani cuisine in Bangalore. This turnkey project required a kitchen designed to handle the unique demands of traditional, high-volume cooking while meeting modern fine dining standards of efficiency and safety.

The execution involved installing a heavy-duty hood and ducting system to manage the intense smoke and aromas from traditional cooking, paired with an automatic flame suppression system. To support the elaborate prep work of Rajasthani fare, we supplied robust food processing equipment including a grinder and vegetable chopper. The kitchen’s core featured multiple specialized burners, hot plates, authentic clay tandoors, and high-capacity deep fat fryers to execute the rich, slow-cooked dishes and fried delicacies central to the menu.

Custom work tables and sinks were fabricated to optimize the compact space, ensuring a logical workflow from prep to plating. From initial design consultation to final equipment commissioning and staff training, Dolar Group delivered a fully integrated, high-performance kitchen.
