Dolar Group was commissioned to engineer the complete kitchen infrastructure for the renowned Bombay Brasserie in Bangalore, a project demanding the highest standards of precision for a fine dining establishment. Our turnkey scope encompassed the entire culinary backend, from design to operational handover, tailored to the restaurant’s sophisticated menu.
The execution included the complete hood and ducting system for ventilation, alongside a critical flame suppression system to ensure top-tier safety. We supplied and installed specialized food processing equipment such as meat grinders and vegetable choppers for mise-en-place efficiency. The hot section featured tandoors, burners, hot plates, and deep fat fryers to execute authentic, high-heat cooking. The workflow was anchored by custom work tables and sinks, creating a hygienic and ergonomic prep environment.
Every element was integrated into a compact, workflow-optimized layout that maximizes chef productivity and maintains the seamless, elegant service expected in fine dining.
